Ingredients - chicken tagine with olives

  • 2 whole chickens (2 kg), chopped, washed and dried
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons dried coriander
  • 2 tablespoons olive oil
  • 2-3 onions, halved and then sliced
  • 4 garlic cloves, mashed
  • ¼ teaspoon turmeric
  • ¼ teaspoon saffron
  • 250 ml (1 cup) water
  • 250 ml (1 cup) chicken broth
  • 1 cinnamon stick
  • 1 ½ cups pitted green olives
  • 2 tablespoons squeezed lemon
  • 2 tablespoons lemon juice
  • 8 tablespoons fresh parsley, finely chopped
  • 4 tablespoons finely chopped fresh coriander

How to prepare - chicken tagine with olives

  1. In a bowl, mix the ginger, cumin and dried coriander and use half of this mixture to rub the chicken pieces.
  2. Heat the olive oil in a tagine, heatproof skillet or earthenware pot and cook the chicken in it until it becomes a nice brown color. 
  3. Add the onions and garlic to the same pot and cook until the onions are soft.
  4. Add turmeric and saffron with the rest of the spice mixture. Cook for a minute, then add the water, chicken broth and cinnamon stick.
  5. Add the chicken, let the mixture boil, then put it in an oven tray, cover with aluminum foil, and cook in the oven preheated to 200°C and cook for 1¼ - 1½ hours.
  6. Once the chicken is cooked, remove the pot from the oven and add lemon juice, pressed lemon and olives, and stir. Finally, spread fresh parsley and coriander on top.
