 For the biscuit layer:

  • 150g (1½ cup) toasted, crushed toast
  • 80 ml (⅓ cup) melted butter
  • For the filling:
  • 400g (1¾ cup) cream cheese, room temperature
  • 115g (1 cup) powdered sugar
  • 1 teaspoon vanilla extract
  • 300 ml (1 ¼ cup) whipping cream
  • 100g strawberry cut into small pieces
  • 2 teaspoons lemon juice
  • For decoration:
  • 100g strawberries, thinly sliced

Method of preparation - how to make strawberry cheesecake

  1. Put the toast in a plastic bag and roll it with a rolling pin until we get fine crumbs, then transfer it to a bowl. We can do this step with a mixer as well.
  2. Add the melted butter and mix until we have a dough.
  3. We put a metal cake ring on a large serving plate, add the biscuit dough to the inside of the ring and then press it with a flat plastic spoon so that its surface is even, then put it to rest in the fridge while preparing the filling.
  4. Beat cream cheese with sugar and vanilla until the mixture becomes soft.
  5. In another bowl, beat the whipping cream until smooth, then add it to the cream cheese mixture and stir gently until completely combined.
  6. Add the strawberries, stirring gently to the previous mixture, then distribute the mixture on the basis of the cake in the mold and flatten the surface.
  7. Decorate the cheesecake with strawberry slices, then put the cheesecake in the fridge to rest for a whole night.
  8. Free the cake from the mold with a knife or a flat spatula.
