Ingredients - lemon raspberry cake

  • 115 g (½ cup) softened butter
  • 175 g (¾ cup) caster sugar
  • 2 eggs
  • grated lemon peel
  • 1 teaspoon vanilla extract
  • 175 g (1¼ cup) plain flour
  • ½ teaspoon baking powder
  • 85 ml (⅓ cup) milk
  • 100g raspberry
  • for drip:
  • 3 tablespoons powdered sugar
  • juice of one lemon

How to prepare - lemon cake with berries

  1. Preheat the oven to 180°C and line a cake tin with baking paper.
  2. Sift flour and baking powder together in a bowl.
  3. In another bowl, beat the butter with sugar until the mixture becomes creamy, then add the grated lemon peel, stirring.
  4. Lightly beat the eggs in a small bowl and gradually add the mixture to the butter-sugar mixture in 5 or 6 batches, mixing well with a plastic spoon between batches until all the eggs are blended. (We should not use a whisk at this point to avoid too much air in the mixture.)
  5. Add the flour in 2 or 3 batches. Stir and make sure to mix it well before adding the next batch.
  6. Gradually add the milk and mix well, then add the raspberries, stirring gently.
  7. Pour the mixture into a baking tray lined with baking paper on all sides, then brush the paper with melted butter.
  8. Bake the cake in the preheated oven for 40-50 minutes.
  9. Prepare the syrup by sifting powdered sugar into a bowl and mixing it with lemon juice.
  10. To know that the cake is done, we insert a knife in the middle of it, and the knife should come out clean. Remove the cake from the mold and grease its surface and sides while it is hot.
